Fresh Fig & Goat Cheese Salad with Honey Dressing

Ingredients
6–8 fresh figs, halved
100 g goat cheese (or feta, if preferred)
A handful of arugula (rocket)
2 tbsp walnuts, lightly toasted
1 tbsp olive oil
1 tsp honey
1 tsp balsamic vinegar
Salt and freshly ground black pepper
Instructions
Wash and gently dry the arugula, then place it in a serving bowl.
Arrange the fresh figs on top.
Crumble the goat cheese over the salad.
Add the toasted walnuts for extra texture.
In a small bowl, whisk together olive oil, honey, and balsamic vinegar.
Drizzle the dressing over the salad.
Finish with a pinch of salt and freshly ground black pepper.
Serve immediately with a slice of crusty bread. This salad works beautifully as a light lunch or an elegant starter.
